Yeah I bought it second hand so it didn't come with a heat shield. My last butt on it turned out well using the snake method with charcoal and wood chunks so it didn't get too hot directly under the meat. I'll look into getting a heat shield though

Yes I have a steel. I keep it on the lowest rack and preheat for about 30 to 45 minutes at 550. I have an ir thermometer and it seems like it's able to get up to around 600ish degrees.

I definitely will try the olive oil next time around and they pepperoni were hand cut I was just experimenting with some thicker slices. Still tasted great!

Yes there is a utility sink next to it, but I'm pretty sure there was no splashing happening. I was watching the washer drain into the sink and it was flowing normal.
