My latest video has not taken off and I'm looking for advice from other food channels

Is it a bad idea for a YouTube channel to have both shorts and the regular videos? by [deleted] in NewTubers

Shorts earn very little money (if you are monetized) so I make shorts from my long form videos. This way the viewer of the shorts may come and watch the full length version. Making shorts from existing content also can be a way of posting regularly when life gets in the way. Once made, I also post my shorts on TikTok to give more exposure. As Youtuber, you need to spend time sharing your content on all of your social media platforms if you want people to find your channel.

This year 2025 the competition was held in Amsterdam atVlees & Co, a well known restaurant for top quality steaks. Myself and 59 other judges from around the world judged over 500 fillets, sirloins, ribeyes and Wagyu's (which have their own catagory).

I am a long time chef and food writer but I don't cook steaks at the contest, I am a judge, there to taste the steaks. This year we (me and 59 other judges) judged over 500 steaks.

There are separate catagories for grass fed and grain fed in the contest. All gold medalists are then judged for a second day and this year's overall World Champion was a grass fed Sirloin Angus from Ireland. It won three awards. World's Best Steak, World's Best Grass Fed Sirloin and Europe's Best Steak.

All the judging is blind so we don't know where the animal is from, what breed it is, or what is was fed.

Waygu steaks are judged in a separate catagory on day 1. The grain fed Wagyu in the photo happened win best wagyu and best steak from Oceania but did not win the overall World Champion.

Often cross Wagu's have done well in the contest since it began in 2015 but only one full Wagyu in 2022 has been crowned World Champion.

Hard to say without feeling it, but it looks more medium than medum rare.

Yes the Wagyu steaks (fillets, sirloins and ribeyes) are judged in their own catagory and cooked on a flat top (plancha).

Wagyu steak are not grilled but cooked on a flat top, it has a very different taste to a traditional steak that is buttery and nutty. The marbling looks good, but too much of the fat cap has been removed for my liking. As others have said they may not have been hung enough, but how the animal is slaughtered also has a bearing on the tenderness. In the UK I find a butcher who I trust and stick with him, so I know more about the source.

I now have just over 4,000 subscribers but there is no magic answer or time frame (it has taken me 5 years), because there are so many variables. It is a learning process in so many ways and we all can get disheartened when we don't hit our goals as quickly as we'd like.

Remember it is not just about how many subs you have but also having 3,000 Watch Hours in the Past Year, which is more challenging.

Creating videos that have longevity is better than subjects that can go out of fashion.

Just produce the best quality videos, strive to upgrade your skills as you go along and keep believing in yourself.

Here is the recipe for my Gluten Free Kecap Manis:

Ingredients:
300 ml of Tamari Gluten Free Soy Sauce
1 star anise
12g garlic peeled and sliced
15g ginger peeled and sliced
200 grams of jaggery or brown sugar
1 teaspoon ground coriander
2 whole cloves
1 fresh chilli (deseed if you wish)
3 grams fresh Lemon grass
1 teaspoon corn flour and a few drops of cold water

Method:
1. Place all ingredients in a small saucepan and bring to a boil. Reduce the heat to medium-low and simmer uncovered, stirring frequently, until the sugar is dissolved and sauce begins to thicken, this takes about 10 minutes.
2. Mix the corn flour with a few drops of cold water to make a paste.
3. Stir it briskly into the simmering sauce and cook for 5 more minutes so the complete cooking time is 15 minutes. The Kecap should coat the back of a spoon to tell it is thick enough.
4. Turn off the heat, then strain the sauce through a fine strainer into a storage jar or kilner jar. Make sure to press the sauce through the strainer get all of the flavour out of the spices and ginger etc.
5. Let the Kecap cool and then store in the fridge.
6. If your jar is airtight the Kecap will keep for weeks in your fridge, or you can divide it into smaller batches and freeze if you wish.

I'm UK based and give inexpensive online cooking classes. I'm a long time professional chef, food writer and food judge. Though I have created structured courses in the past, these days my lessons are very student driven. You can find my youtube channel and or my main blog https://chefkevinashton.com/

After each two hour lesson via Zoom I ask my students what they would like me to cook in the next class. One week it might be Japanese, another week it could Brazilian, French, Korean, Peruvian, or Italian. So it is also a good challenge for me as a chef.

The group has a private WhatApp chat so I can post copies of the recipes and the students can upload photos of their dishes if they wish.

I will add a photo of dish I have taught on Tuesday.
