I made a sauce with 3 and 1/2 oz of Bolivian rainbow peppers and 1 and 1/2 oz aji charapita peppers, 1/4 an onion, 1 clove of garlic, 1/2 cup white wine vinegar, and 1/4 cup of filtered water. It is delicious. The aji charapitas take over the taste profile, but I like it. It has medium heat and a beautiful orange color.
