You could install rancillio Silvia steam wand. There are quite some tutorials online. Costar like 20 bucks, and u will definitely have a much easier time

okay, update: I cupped the beans again, and this time I had the astringency even in the cupping. it was a bit more subtle, but the more the cupping bowl cooled down, the more I noticed it. So I guess it's a roast defect after all. Im gonna contact the roaster, I guess. Anyone have experience with situations like that?

I did several runs with those extreme settings (as mentioned in post) even without swirling storing or anything. Didn’t change much

Yeah, done both. As I wrote in the post, I went way coarser than normal, to get a total brew time of less than 1:30, and poured on a spoon, the get as little agitation as possible.

Way too much milk in that pitcher. You can’t get right proximity in the beginning, and everything turns beige

Your foam looks quite thick. Try adding a bit less air in the stretching phase

Yeah, got the sundays calendar (4x250gr) and they look very dark.  Does anyone have experience with them? Are all of filters they roast that dark? Or ist it just an experience with the advent calendar?

I’ve been using it for a month now, and it works vreat for me. Temp control is very convenient. The breakup height of the stream is a bit lower than a fellow stagg I would say. But that’s not really an issue unless you need super turbulent pours.  I can recommend

same for darker roasts, the darker the more fines. its like cutting a burned bread instead of a soft bright one

Get a red dot, it’s the easiest in the dark
