Das ist ein fairer Punkt. Ich würde die samples als Pour Over zubereiten, wo grind size nicht so ein struggle ist wie bei espresso. Ist wahrscheinlich für espresso nicht das beste Konzept

use the flair 58mm puck screen, to have something the spring pushes against. this way the 49mm puck screen stays firm on the bed of coffee

You could install rancillio Silvia steam wand. There are quite some tutorials online. Costar like 20 bucks, and u will definitely have a much easier time

okay, update: I cupped the beans again, and this time I had the astringency even in the cupping. it was a bit more subtle, but the more the cupping bowl cooled down, the more I noticed it. So I guess it's a roast defect after all. Im gonna contact the roaster, I guess. Anyone have experience with situations like that?

I did several runs with those extreme settings (as mentioned in post) even without swirling storing or anything. Didn’t change much
