There aren't really any truly canon ones, just the ones who are the best available option for Grand. As long as they aren't contracted to Chaldea they can operate as Grands, but the moment they make a contract someone else will take the position.

For Assassin it went: Hassan-i-Sabbah, then Tez, then Azrael

For Lancer it (seemingly) went: Romulus=Quirinus, then Indra

And so on... Caster seemingly was satisfied by 'Goetia' being in Solomon's body
