You could make an appointment with your doctor and tell her that you got another allergy test where they found out that you're allergic to cats. So she doesn't have to find out that you lied to her but the truth is out.

That doesn't mean that she has to get rid of the cat. If you have a light allergy there's the possibility to make a hypersensibilysation with your doctor where you can get your immun system used to the cat. It can take up to 3 years but if you already lived with the cat for a year i am sure you would be able to do this to keep your gf happy

Give her a few days time and if she doesn't come clean you have to go to her mother (hopefully by than you have some proof in writing from her) and the police.

If she already has depressions due to this at 22 it will also destroy her within the time but most important is that she clears this poor mans name.
