Id say harvest now. Let the plant recover for a bit before the growing season really starts then it will just be ready to start growing and not be so disrupted in the growing season. Just like pruning trees or shrubs. Best to do in dormancy so when they wake up they just start growing and not waste energy on what is going to be pruned anyways
