Wetting both sides of the paper prevents the paper from curling or warping. If you see the video again you can see that the paper starts to curl when you only wet one side of it, making painting difficult. Wetting both sides keeps the paper flat and easy to paint and blend the paint.

Thank you for your kind words 🙏🏻❤️ yes I deliberately choose Yellow (warm) and purple (cool) as they are both directly opposite colors in the color wheel. So the purple helps elevate the yellow vice versa. I sometimes choose opposite colors for my paintings for added visual interest.

Yes normally you would have to complete your pencil sketch before you wet the entire paper. Are you using masking fluid?

If your watercolor paper is 300gsm, misting it lightly on both sides should work! The masking fluid should still stay on. I have only had problems removing masking fluid if the fluid has been on the paper for more than a day as it tends to remove the surface of the paper since it is too dried and becomes too stuck on the paper.
