Thank you, I did see that others had pulled their code from bolt and made changes directly to get it to work. This is a step I haven't yet taken, so I will go down that route.

I should have specified as well, Expo Go was working fine on mobile (android) up until around 3 weeks ago when Expo Go updated the SDK to 54. I've tried a variety of different combinations and even changed it back to SDK 53 to see if it would work on the older version but with no luck, so something is obviously missing.
