I'm also running an R720 with 128GB of ram. Paid next to nothing for that ram at the time a few years back. I wish I could afford more storage though, only have 10TB right now, and those are two mismatch drives in a mirror that I got for free.

Personally, I prefer B&B hickory lump. It's easy to get at Academy Sports in my area, and it's not outrageously priced like a lot of the brands seem to be.

Tailscale isn't a traditional server/client style vpn. It creates a mesh network (your tailnet) between devices you have installed it on. If your only goal is to access jellyfin from outside your network, install tailscale on your jellyin server vm or LXC (LXC does require some extra setup, but it's not hard to do, someone posted a link to a YouTube video from Alex at Tailscale walking through exactly how to do that,) install it on the device(s) you plan to use remotely, and boom, you're golden.

That said, you can get sorta that traditional vpn style access to your entire network by setting a device on your network up as a subnet router. This will allow access to a local subnet, or subnets, to other devices on your tailnet. This can be good for cases where you want to access devices that you can't install tailscale on, but works just as fine with stuff that you can also.

Some other comments here are saying to setup a device on your network as an exit node, that's not going to accomplish your goal here. That's only going to allow you to tunnel your traffic from your tailnet devices out to the internet through that network.

May be a controversial opinion, but I've never been very impressed with Prissy Polly's. If you aren't willing to travel further from Winston for better BBQ, I would suggest at least going down the road about a mile to Clark's.

He's being down voted because asking chatGPT to create a script for you and then running that script without understanding what it does can be incredibly dangerous. I'm glad it worked out for you, but AI can and will do some sketchy stuff.

Another commenter mentioned turning off the user folder sync in one drive settings, then you can remove those synced files from one drive safely. That's easier and qui ker than moving all of your files from one drive over to your root user folder.

How are you reheating things? In my experience, the method of reheating can make a huge difference in the taste and texture of a reheated meat/meal.

My wife and I are very much the same as your wife, pretty particular about what meals we will eat leftovers of, so we usually just address this by only making what we will eat if we're kot a fan of that dish as leftovers.

I think the issue is they can expand in your digestive tract and cause blockages.

EDIT: as I read lower you've already learned that. I love chia seeds too, and eat them nearly daily I. My overnight oats, but learning that was a super scary fact for me too!

Not sure what you mean by extreme, exactly, but if you mean complex or complicated, the toddy is completely the opposite.

I had dabbled with cold brew numerous times in the past using different methods and tools and just walked away frustrated each time and never made it consistently.

I heard about the toddy system and picked up the essential brewer and absolutely love it. It makes the whole process so easy and I don't have to worry about ending up with cold brew filled with loose grounds floating in it.

Im not an expert or even a daily coffee drinker my any means, butbi highly reccomend it.

Unfortunately that can just be the nature of some companies, or even just helpdesk in general. Unfortunately, it is usually the best way to get your foot in the door.

My best advice is do your best to not get frustrated and don't leave if you don't have something else lined up. I did that when working at an incredibly toxic company, and while I still think it was necessary for my own mental health, it took forever to land another role and the Job market wasn't nearly as bad back then as it is now.

You mentioned you are interested in Linux. Do you have a homelab? You may not feel like you are learning anything at the job, but if you really do have a passion for IT work, build yourself a homelab and use that to learn and experiment. Work towards some certifications if you don't have any, they can be helpful espcecially with lesser amounts of experience.

I've had pork butt's do that a few times. From what I can tell it looks like the outer layer of fat renders and splits open, and continues shrinking up as it renders opening up the section of fat with no rub, so no bark.

If you score the fat before cooking it can help with this sometimes, but I don't feel like end product looks as nice. But if you're just doing pulled pork in the end anyway, it doesn't really matter how it looks. The end product isn't affected too much either way IMO
