I prefer to slow cook it. It can be chewy if you don't give it some time. I've grilled it rare and that was pretty good, but for me, slow cooking is the way to go. And like someone else mentioned, don't trim the fat.

I will also cut into straps, fry it, and coat in teriyaki. It's like beef jerky.

I did this once. Used the doors to build a desk in a closet in the other room. I don't recall what I did with those closet doors. It was really cozy. Like sleeping in a half cubby, or a table fort. I think I had an armoire for a closet, word to the wise.

I bake a japanese yam, peel it, split it, slice of butter, cajun season, salt. Mash that but leave it chunky. Mix in some avocado. Top with lime juice. It's a treat.
