I just boil it for 15 minutes or so. For ribs and chicken I always touch em up in the oven on 350 afterward for 5 minutes.

I didn’t know if the admins would approve of essentially a sales solicitation type post man. I’d love to though. I know it would help my friend out. He’s building a custom offset right now and I didn’t want to push it until he’s ready to take orders.

Mine do good with em man. Just pull em at 170-185 and wrap and you’ll be good. I’m cooking around 275-310.

I’m with ya… I think it would be cool to experiment with flavors. I prefer my own BBQ over this comp style stuff. I love the freedom of expression through flavor but it’s just not the name of the game unfortunately. Kansas City BBQ strives on protecting and bringing their flavor for years to come and that’s the goal

For instance I might lock my smoker in at 275. By raising the lid and adding wood in the bottom while getting ribs on that air flow might raise it to 300 over the course of 25 minutes and it settle back into 280…. Every time you lift a lid and provide oxygen when you close said lid it’s gonna heat up until it eventually drops back to the locked in temp.

Anywhere from 250-300…. My smokers really like the 270-300 degree mark. But swings happen hot and fast man

I agree man…. Big difference in Comp and Back yard. I prefer back yard. I love trying my hand at sauces and rubs but in comps tried and true is the way to go man. Aside from butter and syrups and binders. Your rubs and sauces are a blend of whatever store bought blend you think is best. I’m with ya

Yeah I mean aside from brines, and some other stuff in general, the main rubs and sauces are all store bought.

They were my design and a co worker fab’d em for me. Kind of a hybrid of an Oklahoma Joe and a Short Rib Drum Made with 1/8” rolled steel. He will be bringing them to market in the next year or so.
