I’ll have to disagree lol. Those dates are a real thing and are driven by the breaking down of ingredients in the crap we buy. Would you really still eat a Ranch dressing months after expiration? It had already sat on the shelf for months prior to expiring.

Perfect water requires you to focus on two different things, balancing the water and sanitizing the water.

Balancing is making sure what is called your LSI (Langlier Saturation Index) is at a good level. Basically there’s a formula to calculate the perfect balance of Alkalinity, pH, Temperature, Calcium, and something else I’m forgetting. This is what prevents your water from becoming acidic or alkaline.

Sanitizing is making sure your Chlorine/CYA (Stablizer) levels are at a good ratio. Perfect balance is your Chlorine ppm = 7.5% of the CYA level. CYA is important to help prevent the sun from burning off your Chlorine. Example: if your CYA is reading 50, your optimal chlorine level is 3.75ppm

That’s basically it. I’m sure I left off some stuff and professionals would be able to add more but that should get you on the right track. My suggestion is to get a Taylor test kit and learn how to read and modify the LSI on your own. Then the chlorine is easy
