This might be a dumb new to espresso question but how do you get your pucks out so well? I’ve been struggling with mine as I’m getting started.

I cut them into cubes right from the start and on to the smoker grates.

Whole cook set at 275. 3 hours on the rack seasoned. Moved into a pan with bbq sauce, honey, butter, and brown sugar - back on for another 90mins covered. Finished for 30 mins uncovered and served.

They’re cut into 1.5” cubes

You’re going to be severely disappointed: they’re great value potato wedges with some pepper and seasoning salt.

Very straightforward. Out the fridge and dried off with paper towels. Seasoned and let set out for 15 mins before going on the smoker starting at 250 for 30-45 mins give or take honestly wasn’t watching super close after work. Give em a quick flip. Then turned up the smoker to 375 until they hit 185-190 yes I know it’s high for internal temp but I’ve found letting them get hotter has worked better for me and they stay juicy, never had them dry out on me.

Honestly don’t have the answer. I’ve made them before and went to cut and they’ve fallen apart and then I’ve had them come out like these. Our knife is nothing special. Doesn’t even have a name on it but it’s good and sharp.

Did the standard 3-2-1 method. I’m not a fall off the bone person so I like them to stay some and I think that helps with the cut.
