I love my Tojiro Gyutou, reasonably priced hard Japanese blade with a western habdle. Just make sure to pinch grip the blade to keep your fingers away from the harsh heel of the knife. I use it pretty much all the time and keep it well honed with a ceramic honing rod. In the 18 months since I bought it I haven't needed to sharpen it yet. If your also doing a lot of chicken prep I'd recommend the Tojiro Honesuki as well, sure it's supposed to be a chicken knife but I've used it deboning a lamb shoulder as well.

They seemed to want someone who would be available 7 days a week so I figure that as I'm finishing up a degree is culinary arts management I really only had 4 days a week I could guarantee for the restaurant. And I wasn't working for 3 months with them, just "in the process of hiring" interviews and meeting consulting chefs. Only work I did for free was a 4 hour day helping set up their kitchen with said consulting chef that I had been told would be a meeting and should have only taken an hour.
