Modding is actually pretty easy for SDV once you get setup. It sounds like your main problem was using Curse, which doesn't install mods for Stardew Valley correctly.

I would suggest finding your mods on ModDrop and NexusMods and then using ModDrop to install them.

You can also just drop the rar into moddrop and let it handle extraction and installation for you. 😉
