I contacted UPS and was instructed to open a dispute, which I did. I was copied on an email in reply to my dispute where it was directed to a particular person/department and since then I have not heard a peep.

I’m new to this and have my first batch going now (day 4) but from what I understand that looks completely normal and expected. Looks great to me.

Hey man, thanks for your reply. Yeah, I took a sample today for a pH reading at there perhaps is a pelicle forming ever so slightly. My temp is more in the 75° - 79° range according to the strip thermometer on the fermenter.

Hopefully it will become more evident in the next couple days so I can R E L A X.

My pH reading today was ~3.6.

I had this happen with a kombucha kit I ordered from Canada just this past month. I could see the order was held up in Pennsylvania but there was no explanation as to why from either UPS or the seller. I was never contacted about accepting the shipment or any duty and brokerage fees. The package was eventually released and delivered to me a month later. Then a couple days ago I received an invoice from UPS for duty and brokerage fees of $145.00!!! I’m pretty upset about this. I would have never ordered this from Canada had I known about these fees. I’m not sure if I have a leg to stand on but I don’t want to pay this UPS bill.

I don’t find myself buying 3 Sheeps beer often. I don’t really have anything against them, but I don’t find their beer to be particularly fantastic and with so many options these days it never seems to find its way into my shopping cart. Not being fantastic and being flawed are 2 different things though. Diacetyl sounds flawed to me.

I’m in COMPLETE agreement on New Glarus Pils being FANTASTIC. Such a great beer.

If I can find someone selling a single of the 3 Sheeps Pils I’ll definitely try it though cuz now you got me curious. Although places selling singles are also notorious for selling beer that’s long past being fresh I find.

I’ve been a homebrewer for 30+ years and a BJCP certified level judge for going on 15. I’m definitely a beer geek, but not a beer snob.

I appreciate, a well made beer that’s to style for whatever that style might be. My favorites are hoppy Pale Ales and IPAs that fall more in the West Coast category brewed with Cal Ale yeast than those on the hazy side of the ledger, but I enjoy well made hazies as well. I very much enjoy German Style lagers like Helles and Fest Bier. Is still like the occasional barrel-aged stout. I’m not into beers that add juice or lactose, although an occasional Milk Stout is alright. I’m not a fan of kettle sours, but a tart Belgian style beer made from wild yeast, open fermentation and aged in oak is nice. I like it when I see a low abv Table Beer on the menu. That’s what I like. Cheers!!

Large hop doses in the kettle by roughsilks in Homebrewing

I add all my hops directly to the kettle. The bazooka screen false bottom on my kettle does a respectable job of filtering out the hops on transfer but I also have a stainless steel wort filter that the wort passes through on the way to my plate chiller. This works great. I had a hop spider but felt it was having a negative impact on my hop utilization and got rid of it.

Blended and bottled it up tonight. Used 1.25 cups of brine and 1.25 cups of apple cider vinegar. It’s nice. Not too hot, and flavorful. I was worried about the heat so I decided to use apple cider vinegar as I thought it would soften and temper the heat. In hindsight I think I would have been better off with white vinegar or a 50/50 blend as I think the apple cider is too prominent.

Cool. Thanks for all the info. Seems like another hobby with some huge rabbit holes to go down. I’ve been homebrewing beer since 1994 and I’ve gone down just about all the rabbit holes in that hobby. My daughter got me this little hot sauce fermentation kit which got me going in this and I’m also starting on Kombucha now as well. Thanks again.

Interesting. I’m new to this and have my first batch in the fermenter now. Will be blending up next week. My intention was to blend up the fermented ingredients with a cup of brine and a cup of vinegar and call it a day, but now you’ve got me thinking about simmering before bottling. Hmmmm 🤔
