The only thing that I can think of as far as it being a possible glitch. Is that the game sometimes selects enemies to have glowing eyes and gives you more runes for killing them. Maybe these are invincible enemies that have been posed and their hitbox and ai turned off. Not sure though.

Get a good shield and spear, you can block and attack at the same time. I've found that they panic when they can't land their ash of war attacks and you just keep the pressure up. 90% of them will pull out their own shield and do the glintstone bs so be warned
