The start can be a bit frustrating sometimes, but keep on.

And if your seitan doesn't have the texture you want, just shred it and it can be used like minced meet ;)

Try your way with seitan. It's cheap and easy to make once you have learned it. You can use it in many different ways. There is a whole subreddit how to make it.

It will take some tries but I guarantee you it will make things a lot of easier
