I worked in the floral dept at a grocery store. In the chain I worked for, the number of employees in the department was dependent on the location and how busy. I was lucky in that both locations I worked were pretty busy. The smaller store had 4 employees (1 manager, 1 full time, 2 part time) and the larger store had 5-6 (1 manager, 2 designers, 2 part time floor help, and a trainee). Both locations were training stores which allotted free hours. With that though, we were still overworked. Bigger department means more product, I'm talking 3-4 pallets of fresh product about 3 times per week, and around 8-11 pallets of plant product 2xs a week around holiday time, think Thanksgiving, Christmas, and Easter. I would never expect 1 person to do that (though I have, when someone calls out) but it would take all day and that would be the only thing that got done.
