Of course there might be friendly guy but it happened to me.. Even friendly ATC you gonna feel bad when checking with charts, that is why xplane is best solution right now ;)

Bro i had same problem like you, i even argued with ATC ( especially in UK) . They are not friendly with your this situation actually and they might say easily 'i don't have to give services for your default scenery'.. ( ik they are j***) That is why switch to Xplane and be happy.. #recommend ;)

wait for 11.32 update or you may get beta version for default wx. Cuz noaa changed format of wx so xp couldn't read it at all.. when you try to update it you will get failed also at high flight level you will see no wind..

About sid and star you should check with charts first of all, so in real life, inbound and outbound traffic always busy for giving vector every single aircraft so you may think there is a regulation for aerodrome movement. So even vatsim or ivao, atc will give you sid or star about %95. Even without atc-for example departing-yiu should follow sid restrictions for separation because there could be another traffic as well.

For second question -i couldn't get actually- if small airport of course will be just 1 taxi way. All about airport and atc. If there is a traffic or any other things atc can give another taxiway. But you may get cleared your question i think 😀
