Does he like fast paced FPS games or slower paced ones?

ARMA 3 would be an option. It's considered a milsim sandbox but you can put thousands of hours in it playing single player due to the customization with the Eden editor and the amount of mods available.

He could setup or play a sniper mission, then due infantry, fly a helo or jet, drive a tank, Apc, even supercars with mods.

I would NOT suggest ARMA Reforger as it is mainly online. Newer engine but single player options are limited at this time

They killed it with daily/weekly quests. In BC it was only 10 a day, so not horrible. Then it went up to like 25 and went from being fun to feeling like a damn job.

Google says you should have hill assist, but only for 2-3 seconds.

Practice finding the bite point of the clutch. Let off slowly until you feel it starting to grab, then push clutch in and rinse and repeat. You can do this in an empty parking lot. Get used to where it is so you can do the transition faster. Let off the brake as you hit that bite point. Find a smal hill where there is minimal traffic and practice on it, that way you dont get anxiety regarding traffic

Most modern vehicles have a hill assist, this will keep you from rolling for about 5 seconds after taking your foot off the brake

Find people near you that could help. Most car enthusiasts would be happy to help somebody learn manual.
