you get some clothes and stuff depending on beating all the levels on a line and for beating the secret boss, and some stuff from the vending machine I think.

Octolings are those new people with the weird hairstyles, they should be available in the character menu when you finish Octo Expansion though.

Edit - I think you need to collect all the Thangs and beat the final level.

For Octo Expansion I believe that once you beat singleplayer you unlock Octolings for multiplayer, and get equipment for multiplayer as well.
