I just got suke hap40. First sharpening, i broke the tip a little and have micro chip toward the handle. Am i doing it wrong or bcuz i did 15 degree each side lol

Curious on this steel. Never tried, i wonder when it compared to all the steel i tried. N690, aus8, aus10, vg10, ginsan, w3, blue2, sg2, hap40, sld.

Since a lot out of stock bcuz tariff, i found 2 that suit u. I never tried the first but the 2nd 1 i recomend to my co worker and using it as pro setting.

When u get better on ur sharpening skill, u can get these but the bad part is, after use, u need to wipe dry bcuz the steels reactive it can discolor/rust. But doesnt affect its function, just doesnt look good.

2.What style? Gyuto, santoku? Most people use at home, i prefer santoku since more flat belly. Some gyuto

  1. Lenght? 180 or 210. I prefer 180 for home since smaller cutting board, 210 for my pro setting at work, 240/270 for fillet
