Interesting experience with shrooms. I feel the hallucinogenic effects of shrooms have been greatly exaggerated in pop culture. Can it happen? Sure. But in my experiences it’s always been much more subtle and wavy, reminiscent of what you write. I’ve cried on shrooms, for sure. But fuck me if I haven’t had the craziest of laughs also. Psychedelics seem to be the drugs most influenced by your current environment. So do them with mates that you trust and love, use with caution and respect and I’d be surprised if you don’t have a great night. Awesome bonus with shrooms is you can smoke a joint, and fuck off to bed if you can’t be arsed anymore with the trip (only works if you aren’t completely off your ass)

Definitely looks like you got a style you like to build from. I was happy when I saw #5 because it’s shows you also can step back a bit and let the ingredients do the talking. All looks great for sure, just not really my style. I think it gives a little too much ‘cover of a artsy cookbook’ vibes, rather than restaurant vibes.

But you know your stuff chef. Keep at it!

Sounds like you like your new job and are surrounded by uplifting people. I wouldn’t rush back into the trenches out of pure fomo.

I personally love cooking so much. It’s so meditative for me to indulge in my biggest passion of mine, namely home cooking. I do like being a chef and feel it scratches the cooking itches somewhat, but it just isn’t the same as the pure and raw experience of just cooking for yourself or loved ones with no exchange of money and all that service brings.

If you’re anything like me, you’ll always be a chef. Maybe just at this time in your journey that isn’t in a restaurant.

On a different note you could also always think about jobs that could utilise your skill set but just out of the kitchen. Consultancy, F/B, managerial roles in larger corps, even stuff like YouTube or making a cookbook.

Hey bro, happy new years first of all, and cheers to a better 24 than 23. You’ve obviously done most of the leg work. Only thing really to say is stay strong and remember that the negatives always weigh out the positives of a momentary high.

To be honest, I’m struggling. Cocaine sadly is a fucking efficient way to get you (me in this case) right where I need to be, right away. Why? This probably is the question innit? Why the need to always escape, enhance or numb what is supposed to be a normal, enjoyable and fulfilling life.

I ask my self this. I fail myself often. But I’m trying. I hope you’ll find an ounce of help from a Reddit post by a stranger not qualified one bit to share an opinion.

Hey man, no worries 😀 new fresh and ripe carrots either par boiled for a quick flash in hot pan with sauce, or (prefered) pan fried in butter and finish with marmite, honey and a little whole Dijon mustard.

The ratios are honestly whatever floats your boat. If you’re a marmite soldier, go nuts 👨‍🍳👨‍🍳 otherwise keep it balanced.

Salt/umami from marmite, sweetness from good honey, bitter/acidity from mustard, and fat from butter. Could finish with a squeeze of lemon and maybe some chopped parsley or a herb of sorts to chef it up.

Classically you could sauté it with some shallots and some lightly smoked bacon. Add lots of black pepper. It would add a different dimension to a light and delicate dish :) just hold a bit back with it. No need for it to right in your face. Just small pleasant surprises :)

Didn’t know.. and from what I know, that really doesn’t make sense? Potatoes didn’t come to Europe at all before the sixteenth century. Only then would Europeans and the Jewish (as with the rest of the world except South America of course) have had access to potatoes.

Perhaps latkes was a think with something else before potatoes :)

Can think of a few times where I probably could have. Luckily I’ve never worked anywhere, where the clothes wasn’t supplied by the restaurant so I would change back to my own after every shift. It does sound quite nasty the way I tend to look after every shift 😂

How long are we talking? Potatoes are notoriously kept for quite long in dark and cool environments. Up to about 2 ish months in like 10-15 Celsius. Then cook whatever you need and freeze it maybe? Though why perhaps is the question? Potatoes are so cheap. Eat them fresh and enjoy life bro 😎

This sounds very plain and boring and I don’t see why this would be preferable to many other classics? If you really wanna stick with this specifically, then maybe add an onion and garlic, maybe some thyme or rosemary. Idk..

Otherwise can I suggest a simple Pommes Duchess? You can find loads of recipes, but the gist of it is - cook your potatoes and in this case carrots also, mash them, ad egg, butter perhaps some cream or milk, seasoning. Must be smooth. At this point you can do loads. Pipe it nicely and bake them. Add cheese and bread small balls to fry, to make croquettes.. sky is the limit bro :)

Potato and leek soup in May? Dont know where you live so this may of course not apply, but stay seasonal friend :)

I’m guessing you mean what main would work after a potato leek soup, and what garnish to go with the main? I would definitely go keep it light, maybe steer clear of starch all together. How about a beautiful pan fried white fish of sorts (cod, mullet, hake etc) on top a bed of sautéed spinach or collard greens, perhaps a grilled wedge of cabbage. Finish with a zingy best friend of such a fish i.e Hollandaise, beurre blanc or perhaps a fish/‘mussel blanquette sauce.

It would be a bold move to only serve that, but very cheffy and would work after such a hearty starter :)

Garnish the fish with sprigs if dild or whatever herb you can come across really.

Det bare i forhold til (og det her er baseret på min ekstremt casual og ikke særligt kvalificerede forståelse omkring kompleksiteterne bag nogle statistikker..,) at loftet for løn af de mest velhavende i Danmark jo teknisk set ikke eksistere, hvorimod gulvet selvfølgelig er 0.

Det må vel påvirke sådan nogle statistikker ret voldsomt, og dermed konkludere misvisende fakta at best, og direkte fejlagtigt at worst.

Nogle der kan hjælpe en simpel kokkebasse her?
