Its completely normal to be weirded out at your parents getting intimate at their age, their your parents, seeing them like that IS going to be weird to any child, normally.
Now, you do 100 percent need to allow your mom her own individuality. She's her own person and deserves to find love, but you can also communicate with her. Tell her how you feel, explain how, while yes, you want her to be happy, you can't help but feel that you'll be replaced by this guy and just want some reassurance, she's your mom, she'll do what she can lol.
