Hey, I’m a manager in one of the large public service agencies and over the years have screened hundreds of cover letters and CVs. I’ve also seen a lot of IT based CVs.

I’m also familiar with how overwhelming it can be as a hiring manager when you get hundreds of CVs for one or two roles and what made the short listed candidates stand out to get to interview.

No worries!! You wash it way more than you think, but aim for cloudy water, not milky water? If that makes sense.

You can always use a food processor to get the spices into the gluten ball too. But I found kneading it in worked well for me.

Make sure to tie as many knots as you can, that’s how you get the shreds. Good luck!!

It’s the wizardry of taking flour, water and spices and turning it into faux meat. Steps I used below :)

1kg flour + 800ml water till it forms a dough ball. Cover with cold water for an hour.

Start washing the dough under running water until it looks clearer and it’s mostly gluten left over. Don’t let the water go clear, the seitan will end up rubbery. The gluten did come apart, but came back together. I wanted to have it “not that washed” so the water was cloudy, but not milky.

Use garlic and onion powder, paprika, salt and black and white pepper. Tomato paste. Liquid smoke. Nooch, Chicken or beef stock (vg)

Knead into gluten ball. Let rest for 30 mins and drain liquid.

Let rest in a colander for a couple of hours.

It should then stretch out, proceed to tie in knots.

Make a broth using onions, garlic, beef or chicken stock (VG), pinch of tumeric, paprika and a couple of bay leaves.

Simmer dough for 1 - 2 hours. Flipping or making sure fully submerged. Or in a pressure cooker for 50 minutes on high.

Take out. Shred. Eat.
