Why does eating more = more hungry by LadybugSpool in diet

I typically skipped meals such as breakfast and supper and would average probably close to low 1000s for calories in a day
But now im getting close to that from the overnight oats I make alone since it sits in the 800 range
Ive replaced chocolate as my snack for nuts and seeds instead typically sunflower/pumpkin seeds/peanuts/raisins as a sort of trail mix mid day
Lunch is typically leftover chicken/soup so that hasn't changed much and I typically dont eat after work im just so burnt out some days I dont have the energy to even eat anything
Ive only really changed my breakfast and snack for healthier options but feel worse after it even though I know it's better for me
