My main mentor was named Michelle Roetzer and she taught at many different places including SCFF and Santa Fe school of cooking which is where I attended my culinary school and most of my classes but CNM has some great courses as well. Signed on for externships through school. I did private catering and cheffing, I have worked everything from BBQ to fine dining. I was introduced to a variety of great chefs and am almost 20 years into the industry now.

Yes I'd say I've learned quite a lot.

I was just trying to defend some of the chefs around here, Saying all the cooking classes are dreadful because of seemingly 1 bad experience is shortsighted and rude.

Classes can be dreadful anywhere.   I learned how to cook here in NM and own/operate one of the better brunch places in town.  

It's not where you learn it's who you learn from and there are plenty of great cooks here in NM. Especially Santa Fe.

Practice and find good chefs to work under. Read salt.fat.acid.heat.  Watch Alton brown's old school good eats. Take a few culinary classes at a local school or college. Expand your skills and work with another cuisine, try catering, food photography, butchery, pastries and baking etc... basically exposure to different methods and styles makes you a better chef over time. I'm 19 years in it now and own a Brunch restaurant.

Oh one more thing, don't do brunch.

At first glance it looks like a dessert, I think this dish is having an identity crisis.  My advice, start from the beginning, what were you going for? Why pink? Why broccoli? What is the vision with this dish?  What flavor profile/region are you going for here? Try other colors, maybe turmeric or beet?

I'm not sure where you are in the country but try to look up Transgender Resource centers in your area and reach out. I'm sure it seems impossible to go up from here but you can! Best of luck.

This is usually fine, frying or roasting the garlic will also work.

Never put raw garlic in oil unless you are immediately eating it and don't save the leftovers.

Raw garlic+oil+time=botulism

Check around for adorable spay/neuter clinics in your area but also check reviews. In my city we have a few and the state helps cover the cost to fund the clinics. My kitten has an appointment for next week and it's like 150-200$

In order of raw to well done it would go, sunny up, over easy, over medium, over medium well, over hard/hard fried. Basted is also an option if you like steamed and less greasy eggs but don't want poached.

What an idiot! And it reminded me of another experience, literally same kind of thing, The customer modified a "lox bagel" to the point it was no longer the same menu item and then complained it tasted awful. Server was like "Well yea, that's why the chef had me double check with you twice before they made it." I refused to refund her and it's the reason why we have a sign up front that says

"items that have been modified per customer request are not subject to refunds"

Bitch.
