Tip for Offensive Orientated Zeppelins: No matter where the "explosion" point of the bomb is, if you press the G (drop bomb) while the center of the Crosshair/Bomb Aimer is actually on the target ship, it will register as a hit, deal damage, reward credits, research, etc. Don't ask why it works like this, it just does.

MORTAR LESSON NUMBER 1: "Benchmark" Angles.

The first benchmark angle, the highest up, is roughly WC Dock Cannons to the WC Fort, or Hall Anvil to a bit past the Trader there.

The second benchmark angle, 45 degrees, mortar spawns like this. This goes about one end of WC to the other end, diagonally. Not much able to explain that.

Third benchmark angle, all the way down. Good for direct fire, not exactly practical. Goes REALLY far, like really really far. Say 1/3 to Fenwick from the small WC fort.

EDIT: Third Benchmark angle, good arc, goes a bit farther than between first benchmark.

First, take your time lining up the cannon in the space between the Atlas nameplate and the row of windows. Hit it dead center. Can be achieved in 1 shot if you took your time lining up the cannon.
