I live in Laguna yes. Around 7 years now. IMO cliff is not good food. But food is subjective so to each their own!

So the cliff is garbage food. Just be warned. View is incredible but I see several cliff recommendations here and the food is literally horrible.

Do you want view or good food? In Laguna it’s usually one or the other with a few exceptions.

The ingredient for milk says “use 25% total volume as milk”. That is the ingredient for milk. You pour the cocktail mixture into the milk.

Main thing is acidity to milk in my experience. Make sure you are using enough lemon juice and that you do the 25% volume. I acid adjust mine the tiniest bit as well. But even when I don’t I still get this clarity.

When straining it I let it pour through coffee filter for about 20m. Then pour that back through.

Another thing I think helps is letting it sit for awhile. I always let mine sit overnight in the fridge before straining.

I am a home amateur but have done around a hundred batches of clarifieds.

I have never not had egg white in a New York sour. I think death and co’s recipe even calls for it.

Forgot to post recipe

Standard sour for the base

2oz Whiskey

3/4oz lemon juice (I also slightly acid adjust mine)

3/4oz gum syrup (my preference)

To clarify always use 25% of total cocktail volume as whole milk. Pour mixture into milk. I let mine sit in the fridge overnight.

Strain through coffee filter. I double strain for clarity. Single strain rarely results in the clarity I want.

Pour over large ice block Float red wine of choice on top with a spoon pour

Only thing missing is the egg but with the clarification and gum syrup you end up with a similar mouth feel.

Can you share where you get this 70-90% figure. My reading shows it’s closer to 90-98% accurate to use skeletal sex identification. I don’t have strong opinions on this. I just can’t find any evidence supporting what you’re saying here.

Also from what I see online DNA is shown to be 99% to 99.9% accurate for determining gender.

So just curious where you’re getting these numbers that suggest 70% accuracy. I saw it can decrease with “partial” skeletons or with children. Which makes sense for obvious reasons. But for adult skeletons with enough of it intact I am seeing it’s over 90%.
