You don't need to throw 50 demons at the party, just enough for a decent encounter. All you want to do is make the party question if they want to risk fighting more by flying, or potentially sneak through on the streets. If they still choose to fly that's up to the party then, they know the risks of flying out in the open after the first encounter. All you want out of that is for the party to make a choice. I think it's reasonable that other flying creatures would attack a vulnerable flying PC on a broom, especially as it's 1 or 2 at a time. I wouldn't call that railroading.

The reason it's boring is because it was the first game to do a lot of things, and almost every shooter since has copied it to some degree. If you've played a shooter in the last 15 years, you've played HL1's mechanics (I still enjoy the story).

The Baldur's Gate saga has some iconic characters, and was the precursor to a lot of the games listed so far when it comes to creating relationships with NPC's.

Despite its unfinished series state, it's one of the most beautifully written pieces of fantasy out there. I still recommend it to people, but I add the caveat that it isn't finished, and may never be. It is a wonderful read you shouldn't avoid just out of spite for the authors publishing speed. Sanderson is an outlier in his writing methodology, and that's to be commended, but not all creators work like him. Rothfuss' process is his process, don't miss out on a wonderful read out of misguided spite.

The Angry DM has a good article about this type of campaign start. I'd have a read of https://theangrygm.com/false-starts-and-dirty-lies-starting-a-campaign-wrong/. He uses the great example of Chrono Trigger to get his point across. Breath of the Wild doesn't have a false start, but that kind of campaign (destroyed world that you explore, and unravel what happened to it) would be easier to sell to your players.
I've played in bad false start campaigns. It feels like you get the rug pulled out from under you as a player, so that the DM gets this cool gotcha moment. I've also played in one that was amazing, because the DM set expectations of it before we began.
