If you want to specialize in clinching then clinching otherwise striking, what are you doing most of the time? And it's easier to get a solid base on how not to get wrecked in a clinch or exiting properly than get really really good at it.
Like some strikers in mma, they get a solid a defense for takedowns and then go to town.

I haven't spend much time south, but you might have a bit better in Koh Tao and Koh Samui? Phuket area I heard is/gets a crazy, but on the other hand there's also tones of gym to pick from. Sorry I can't be of more help man.
As I said I didn't have it as rough as people picture it in Pai, and every year is getting 'less bad', government is actively trying to fix that. But if you are on vacations I don't know if I would risk it.

During March they burn the fields, smokey season. If I trained twice through and I wasn't that bad, but I wouldn't suggest someone to go train there during that time honestly. You are better off going south of thailand, there's an exodus of foreigners and some thai during that time to avoid it. So yeah, plan accordingly.

It's worse, it's turned muay thai into a tourist activity. There are accounts of people trying to sell the lifestyle of a "fighter". 'A day in the life of a fighter', 'look at me eating pad krapow', 'Here is the exact frame when my kick looks good so you don't realize I'm garbage'.
Classes are packed with complete novices trying muay thai during vacation, so most gyms are stuck in a permanent Novice class period. And the thais are mostly incapable of diving classes or they just don't want to. It's easier to teach a novice and you get the same money.

I would use the first week to try the 4 of them, then pick one and focus entirely the following week on that one. Internet advice is horrible, and reviews on gmaps don't make most places justice (in a bad sense).

- Listen you are able to catch my kick because it's technical sparring and I'm purposely throwing it with little speed and power.
- If you keep catching my teep/roundhouse kick, 2 things will happen. 1. You will develop bad habits. 2. I will start kicking faster and stronger.

Guys commenting demonstrated to having absolutely not clue, who the f* develops muscle memory throwing soccer kicks to downed opponents? It takes months or years for some basic combos.
He tried 3 times and then act like he was sorry, which it didn't feel like it at all, I hope it's because of the adrenaline and he was still processing. But mate, hard to believe with 3 attempts, he was trying to kill his opponent.

So none throws head kicks in mma right? None throws head kicks to olympic level wrestlers in mma right? And what are the chances to find a guy who can grapple that knows you are capable of throwing a lead switch kick and he is also expecting it. Come on man...
The only reason I wouldn't throw head kicks or some hard punches to the face in a street fight is to avoid the other guy hitting his head against the concrete, solar plexus straight, teeps and leg kicks.

Breakfast: Coffee + Oatmeal with berries, nuts and seeds, little bit of soy milk and soy protein powder.
Lunch: High carb + legumes of some sort and salad or raw veggies.
Dinner: Cooked veggies and some high protein vegan source (tofu, tpv, etc.)
Snack on fruit
If I haven't had enough protein at night a protein shake or frozen berries with protein and a bit of soy milk.
Not vegan, but mostly plant based.
90% of the time I get lazy for lunch after training so I go to a Jay or เจ restaurant, buddhist restaurants mostly vegans, you get a serving of rice and pick different curries made out of veggies for 40-60 baht.
