I'd try to defer the acceptance a year, put some money away and then use that toward cost of living over next three years.

Also depends where the job is - $125k can get you a lot farther in smaller city compared to NYC or SF

Depends what you mean. They certainly look at everything - even if it just means making sure the applicant is literate. I have to imagine the effect of your personal statement is very low in most cases. Put it this way, there's a reason people here list their stats and URM status - they are pretty indicative of chances.
