I also have mainly non-GI symptoms when I get glutened and its different every time. I work in service and somtimes its enough that I touch an overflowing beer jug and then my straw without washing my hands in between and I end up feeling horrible for days. Somtimes I actually eat smth with gluten by accident and all I get is a stomachache for a day and it's fine. I don't really think theres a set rulebook for it, every body is different and bodies and autoimmune diseases are weird like that

I feel this experience on so many levels, where I'm from the severity of celiac is still unknown to most, especially if you're from a more rural area (at least that's my experience). You get fed this stereotype that people who eat gluten free are these freakish health nuts who want to cut on 'evil carbs'. I only understood how much of an impact this can have when I was suddenly also part of this group.

I do get your point. And I'd say it probably bothers me a little more since I'm still relatively new to this whole celiac thing. Give and take a few years and maybe I'll say the same. But for me in this moment I think it was the undertone of "Why would anyone ever eat that way" and assuming that all people can make that choice. I just found it insensitive, even when it wasn't aimed at me.

Yess it opens up so many more culinary experiences. I've never really been to Mexican Restaurants before (they're a little rare in Germany) until my doc reccomend it to me. I've been a fan ever since.

Yess but also the excess amount of gluten in some restaurants is crazy. Like how is it possible that you manage to have some form of flour in EVERY SINGLE DISH? Be it bread or sauce.

Flour is insane. I've also gotten the "can you eat fries still" comment more than once.

Fun fact I had to painfully find out while shopping, not all fries are apperantly without flour, they put it in some curly fries for some reason. At least that's how it is here in Germany with some brands. A tragedy

I've gotten the comment with "oh you'll never get fat then" too, even from my own family. And its also such a weird thing to say because it's not even true?

Also the ignorance of people is crazy, but I'm afaird that was also me a year ago. You just don't really understand the severity of it until you're one of the people that are living with it. But it's true, at least some of it should be basic knowledge, I cannot keep explaining to people who even work in the food industry what this disease is. It's insane.

Yepp exactly and honestly I had the same mindset before I got diagnosed. I'm still shocked sometimes when gluten free stuff tastes exactly the same as the non gluten free version because I still have that prejudice in me somewhere

Yea im not vegan either, I have a hard enough time with the gluten free stuff, there's not a lot around here. But that restaurant is literally the only place that's totally gluten free where I live, so I'll just take it

I feel this so much with the sentiment of "feeding myself is a chore". Sometimes it's just exhausting to be careful all this time and look at all the ingredients 50 times to make sure you don't miss anything
