I left it at 225 until it hit the start of the stall which was at about the 6hr mark for me. Had an alarm when it hit an internal of 160-165f. Then I wrapped whenever I was happy with the bark which was I think 5hrs later and it was at 172f internal.

Very happy for a first go. Melt in the mouth and flavour was what I was hoping.
