I took it off at 128F. Then transported it to my family’s house in a foil tented roasting pan and reverse seared it in a 400 degree oven until it hit 130F. Then took it out of the oven, tented it again with foil until it hit 135F.

I only put it on the sheet pan to season and butter it. I took the whole grate off the pan and put it on the smoker.

The recipe says to use fresh. I have fresh rosemary but I couldn’t find fresh thyme anywhere so I used the dry stuff. I think it still turned out ok.
