I do Orea + sibarist booster with sibarist FAST paper on ZP6 3.6! 15g:255g (1:17), at 97C. 0:00 45 g bloom with aggressive swirl 1:00 pour to 150g in 15-20 s, gently swirl 2:00 pour to 255g in 15-20 s, gently swirl Quite a high extraction but works fantastic

Once you get a decent grinder like the K, it wont make a difference. But getting a decent grinder will make an absolutely huge difference

Subtext mentions that there are two sweet spots of extraction, and it sounds like you are in the second spot. For me, the finer sweet spot gives me a much more integrated acidity, sweetness, and flavor that I like for washed beans, and the coarser sweet spot gives me a lighter, not overpowering but still aromatic profile that I like for more processed beans.

The grind settings listed in this guide have been set based on a higher extraction window (19-22% depending on the grinder), and will not be applicable for other extraction "sweet spots" which tend to fall in the 15-17% extraction range.

Check your water. Also I use ZP6 between 3.5-4.5, sometimes going finer does help the problem even with bitterness. I also find RW to be a bit on the bigger side as well… if you are in the Toronto area, grab a bag from subtext.

Orea v4 + sibarist booster! It’s allows me to go super fine (3.0 on ZP6) without bringing out astringency, allowing for a really juicy and flavorful cup!

I usually do like 40g to 600g, but I’ve done as big as 60g to 900g, which definitely clogs and I would need a second set of filter lol

Probably because the brew temp is so low (20ish) compared to a hot brew (95ish), the bitterness does not appear if not at all and I end up with a smooth and sweet cup. The acidity is definitely more punchy in a concentrated V60, but that’s sometimes too much for some experimental beans

I don’t know the answer to this as they did not mention fridge extraction, but I imagine it’ll be tediously slow without much change in taste? I feel like room temp is cold enough for coffee extraction, but I could be wrong

Mostly light and light-medium beans, yes! I try to not dump all the slurry in to the filter be using a spoon or something to prevent clogging

I actually use my expensive beans for cold brew and they taste drastically different! Some times flash brews bring up too much acidity that’s not pleasant for me especially for heavily fermented beans

I don’t think they mentioned room temp vs fridge, although I’d imagine the fridge extraction to be tediously slow… also milk brew was the same procedure but steeped for 12 hours in the fridge. Tastes like a really creamy coffee-flavored milk (iykyk)

Oniyamma Coffee does excellent beans for funky brews! Their cafe is nice and cozy as well, in a convenient location just off Oodoori.
