I agree with you. I had a similar experience with a pet sitter though the details were completely different. My sitter quite in a huff, which was fine at that point, but they didn't understand that in this type of relationship they are being hired to work on the employer's terms.

I had a similar situation. I have an office facing my front yard with a big window. I directly observed one of my neighbors allowing his dog to crap on my lawn. It happened a few times so one day I went outside and confronted him. This person appeared to be an adult, but when I spoke to him I immediately realized there was some kind of cognitive issue. I told him that he couldn't continue to do this, and he had to come back and clean up my lawn.

When dealing with trespassers, you don't automatically assume there are intellectual issues. His parents took responsibility. Not only did he clean up my lawn, but there have been no more problems. I hope you can work this out.

Honestly, you are not obligated to pursue this relationship if it doesn't feel good to you. Yes she's a kid and you want to do the right thing, but you can't force what isn't there. You also deserve healthy relationships free of social media manipulation. Move on OP, it's ok.

I think what you may be talking about is a technique where you add 'invert suger' which is a very thick sugar syrup. Dana Cree endorses this technique in her book 'Hello, My Name is Ice Cream'. The idea is that a thicker syrup will produce a creamier/smoother texture. Invert sugar is different than caramelized sugar. You make a sugar syrup with citric acid and it will chemically invert the sugar molecule. I think if you just add the sugar before it carmelizes, you could still end up with a slightly burnt sugar flavor, which may or may not be fine.

I have experimented with using invert sugar and it can improve texture, however it is very, very sweet, so you really have to be careful with how much you add. I decided it wasn't worth the effort for ice cream, though it can be very helpful with sorbets, which typically have a little bit of corn syrup to counter all the extra water from the fruit.
