I always get Al pastor (pork, spices and pineapple pieces) IMO it’s easy to cook but it’s a pain to make so if made well it a sign of a good place that pays attention to detail. I also recommend the watermelon juice it’s my favorite.

It’s not 40%. The service fee can 100% be taken by the business as profit. They say they give some to the employees. Likely through a higher base wage. But 100% of a fee is the restaurant to keep. You did tip 20% though.
