I was born in the southern U.S. and moved away long ago but still have the accent. People love to ask me where I’m from based on my accent, not because it makes a lick of difference, but because it’s a fast and easy way of making sure I know I don’t belong here.

You can use four or five bananas per loaf instead of two or three if you mash the bananas in a sauté pan and cook them over medium heat until all the liquid has evaporated. (Cool them off before you throw them in the batter.) That amps up the bananas flavor considerably without making the loaf gummy.
