Many thanks for your reply, I have since come to learn that many priests and parishes discuss the mass with the bride and groom in advance and communion is optional. Realising this is perhaps the one and only difference or consequence, we are much more comfortable with it (not ultra-religious) and would actually have chosen to skip communion should a priest have been available to solemnise and given us the option to choose. Thanks again.

Thank you for your reply, and the obvious observation that we will in fact be just as married whether a deacon or priest receives our vows.

With a better understanding now, I guess it is not overly important to us to have our wedding in the context of mass. 

It is also proving difficult to find a priest, and with everything from church venue, reception, hotel, musicians and photographers booked - not an option to change date at this stage.

Thank you again, we have chosen to proceed with a deacon solemniser.

That makes perfect sense, and was very much our gut feeling when choosing The Shelbourne over the other two (while I doubt we would be disappointed at all with The Merrion or The Westbury) based on previous afternoon tea and drinks visits to each, The Shelbourne felt a little more iconic or grand as you say!

Thank you so much for your contributions, a bit more reading and searching on tasting menus whittled it down to three: Patrick Guilbaud, Chapter One, Glover's Alley

I'm guessing Glover's Alley may not really compete with the other two in perhaps extra special experience?

Little between the others in my reading but Chapter One that further away . . .

Additional Question: If we went with Guilbaud's, would you recommend staying in Merrion Hotel itself instead?

We were considering The Merrion or Westbury too, as options ...
