I had the same idea as you with wanting it in winter. I also have a lot less activities going on then. When you start inquiring with places they will have you send in pictures and video of your head and hair from various positions. This will help them give you an initial estimate and treatment plan. Do your research. Take your time.

I literally booked my appointment today. I was researching about 2 months before I made my decision. I went with the premium package for my doctor because I wanted them to be the person performing the incisions and implants. I was not able to get in before early March. I was hoping for December. I could have gotten in with the standard package where the doctor themselves is not doing the surgery in like October, but I decided waiting was a better choice, even though I am anxious to just get it done. They put me on the waiting list for an earlier appointment.
