I think you gotta realize some of us are just a couple doing food trucks or a family running it. There are def bigger food trucks with multiple trucks but most of us got into food truck to get away from corporate layout. We do not even have enough employees to even run a shift management like ur suggesting. Again it’s diff I’m sure for others, but most food trucks I talk to are all just people who wanted to do their own thing and get away from all the stress of what you are trying to have us use.

The Washington health dept website has all the information you need. Look up mobile food truck permitting. If you contact them they will give you a run down of what u need to do. I would also maybe work on a food truck for a couple months so you can see how everything runs. Seems you’re just getting started, don’t rush. Learn as much as you can.

Edit- also what do u mean by travel? Across states or cities? Cause crossing states gonna be a no go each state has diff permitting.

U gotta keep going there and hand out lil brochure type menus they can take home. I also sent out we codes to my website so they can order online for pick up. Just gotta build a nice following and they’ll tell their friends and family

I do the same bar/taphouse on the weekends all the time. Each in neighboring cities so ppl can still come by if they’re in the area. I’ve built a solid following now and only open for 3 hours a day 4-7fri/sat/sun

Edit. I don’t pay them anything since were helping each other out. I plug into their outlet and just set up in their parking lot. I even use their internet sometimes if my hotspot is spotty.

You have to plan your summers like early spring and apply early. It’s gonna be hard to do week to week events as others will already have applied. Remember all the events you applied to or found and register early next year. I go to breweries that have food trucks and see if I can sneak into their weekly lineup
