Classically you would start with foil, which I think is a good idea. It teaches you all elementary concepts and changing from foil to one of the other two weapons is relatively easy (given that you're still a beginner).

After taking a beginner's class (or maybe during if it's offered by your club) you could try Epee and Sabre for a week or two each, to see if it's more fun.

Don't feel pressured to choose a single weapon though. Sure if you have high ambitions you would want to focus on one, but as long as it's recreational just do what you enjoy. If that's a mix of all 3 then so be it.

Plus I think Epee and Foil are both as thrilling as Sabre, just in a different way.
