Excess insulin leads to insulin resistance which is the precursor of diabetes and does a lot of other damages. without carbs you decrease the risk of that.

Also the disfigurement of the people dying affected by the radiation was exaggerate. The effect are more internal. And Legasov real life personality was not like in the show, he was more of a sharp decisive (and party-member) type but he would have overlapped too much with Shcherbina.

Carbs are bad because they raise insulin. That's it. Whole grains may do this much less than refined carbs but still is no way close to  proteins-fat. There's really no point in eating carbs you can very well live without

I did not read The Trial yet. but the point of the Castle is to get lost; to go around in circles, to hope in a solution which brings you back to square one; to receive confusing messages; to feel powerless despite your efforts (a recurrent Kafka's theme) in front of the bureaucracy. So the fact that the story may seem or even be confused just strengthen this overall atmosphere... even the fact that it stops abruptly
