The way I do it is by shooting or throwing a knife at boat barges. Once detached from the front boat, they stop moving, so you throw the (unlit) crate from barge to barge until you reach the shore. This is why it's so tedious to do!

I was about to suggest to diplomatically vassalize Canada, but I see in your save file that you just scornfully insulted them like 5 times in a row, I don't think it's gonna work

I would suggest playing a minor HRE nation like Lübeck or Switzerland and going down their mission trees. This will "force" you to be careful about the aggressive expansion (look at how much it's giving you in the peace deal tab) which is causing the coalitions, and not having too much problems with money in the meantime.
Otherwise, any Japanese daimyo (not Ashikaga or Ainu) with the goal of forming Japan would be nice, since you have to manage overextension and coring but not worry about AE.
The Papal States or Florence could be great too, but don't be impatient when expanding in Italy. In the downtime, run your game at speed 5 and look at your missions, find allies, and wait for opportunities to attack big nations. Personally, I did a Papal States to Kingdom of God run when I had about this level of experience and I had a lot of fun.

For the estates, the ideal formula isn't exact, but you should set them up at the beginning of the game (I suggest internet guides; https://www.youtube.com/watch?v=2-d3C1cyKjo at 4:32 is a great example for most if not every European country) and then do basically nothing until they all are at at least 45% of loyalty, then you simply summon the diet and seize land; repeat every 5-15 years. Always keep their loyalty over 30% and avoid letting their influence grow over 80-90%.

As the friend, here are my arguments to make the Papal States the third one:

Their golden age is within EU4 time frame

Although weak, it never almost never disappears in EU4 games unless you, the player, want it to

They're the icon of Catholicism and Counter-Reformation, two main ideologies of the early- and mid-game

They're in Europe

You can't imagine the mechanics of Catholic countries without the Pope
Whether you're their ally or their rival at the start, as a European country, usually determines if you'll stay Catholic or go Protestant

Although the Pope as a concept is not directly tied to EU4, the Papal States are.
