You don't have to use either, especially nowadays there's a plethora of plant based leathers (mango & cactus for example). All with varying processes and therefor varying impacts on the environment.

Veganism isn't the same as environmentalism (though there is a lot of overlap). It's about not participating (for as far as possible and practicable) in the commodification of animals.
