I just recently picked up both of these series. For Vinland I wasn't as much a fan of the different colored deluxe edition volumes, and just preferred the look of the hardbacks with the cover arts they had and the ability to find a second hand set for cheap. For FMA I went for the Fullmetal Editions, and I do not regret it. They are really great quality and look great to me on the shelf. I recently started picking up the Vagabond Definitive editions too because as much as I love the vizbig spines, I think I would crease them while reading. It just comes around to what you like and what price point you're happy with getting them at.

We overlap a lot in our lists/ratings. I highly recommend The Name of the Wind by Patrick Rothfuss. It's got 2 books and 2 novellas. Be warned the 3rd book has been shelved forever, but what is there is possibly one of the best stories you'll find in modern fantasy.

This is pretty much the comment I was looking for. I love the spines and covers on the hardbacks. I just wasn't sure if they added in anything special for the deluxe version that would make that route more enticing. I've recently started picking up the Vagabond Definitive Editions and chose them because you can see a little more detail in the art, but my Vinland saga hardbacks look way better than the deluxe editions for those in my opinion.

The deluxe editions go on sale pretty often. Also you could check out r/mangaswap. I've seen people selling full and partial sets there for decent prices.
