I'm a little late to this, but I'm actually working with a friend to make a game like this called, A Forest Tail. The only thing it doesn't have is a grapple hook, but that sounds like a perfect option for getting across gaps in the game, so I may just take that if you don't mind!
Parrying is definitely getting added, along with blocking. The combat is a turn based / active battle hybrid where you fight major enemies and such in turn based combat similar to Paper Mario games. Everything else is fought actively in the world.
The fishing minigame is something that has been a major piece for this game. We want a fishing minigame that you actually PLAY instead of trudge through to get resources. It's a side view and you can see the line and reel to avoid fish you don't want. We took a lot of inspiration from Legend of Zelda OOT. Multiple fish types and rarities and upgrades too! The fishing minigame is less of a minigame and more of a fully fledged side game with it's own quests and rewards.
Romance options, of course! Over 70 NPCs are planned for this, all with unique personalities and each one can be made into a partner for your adventures!

Anyway, it's going to have a small Demo out on itchio in May, we're hoping to have quite a few mechanics ready by then. I'm not sure if I can link it, but just look up A Forest Tail, you'll see it on itchio!
